At least one night of Passover we have fried matzah and, of course, on Sunday morning too (more if the kids asked). A favorite during Passover. Mmmmm!

 

Ingredients and directions:

5 matzah

margarine

4 eggs

 

 

Take 5 squares of matzah and soak them in very hot water. Squeeze moisture out of matzah. Put into bowl and add 4 eggs, mix well together (can add a pinch of cinnamon and/or ½ teaspoon vanilla if desired). Melt margarine in frying pan, add matzah/egg mixture and stir till cooked through. Serve with jelly or jam.

 

Cooking time: 10 minutes

Temperature: Medium heat

Serves 3-4
